Halloween is coming and there will always be pie on the table.
Why not make it this cute awesome bite-size spice-less pumpkin pie?
Decorated like a jack-o-lantern makes it festive but you sure can skip it and do a fall themed party or do it for Thanksgiving.
TRY IT BEFORE YOU BASH IT!
This is not your traditional pumpkin pie spice flavour. It is more of a subtle sweet and buttery, custard like filling in the pie. It is not overly sweet with an extra boost of pumpkin.

Yields 24 bites
Ingredients
300g Frozen store bought piecrust, thawed
200g Pumpkin puree
1 Egg yolk
15g Butter, soften
25g White Sugar
100g Milk
3g Custard powder
3g Coconut milk powder
2ml (1/2 tsp) Vanilla extract
100g (3.5oz) White chocolate
7g (2 tsp) Freeze-dried Pumpkin powder
Orange candy colour
Egg White
Dark Chocolate
Method
1. Preheat oven to 220°C (450°F)
2. Roll pie crust into 3mm thin
3. Use a round cutter slightly larger than the mini muffin tin to cut circle shapes out of the dough
4. Push it in the mold with a pastry pusher
5. Make stems with the scraps and press each stem over the edge
6. Apply egg whites to the top edges of each pie
7. Mix pumpkin, egg yolk, butter, sugar, custard powder, coconut milk powder and vanilla together until combined
8. Warm milk to hot but not boiling and slowly mix in with the pumpkin mixture
9. Fill it in a piping bag and cut a small opening
10. Pipe mixture into each pumpkin-shaped pie crust
11. Bake for 12-15 minutes
12. Remove pies to cool and repeat with remaining ingredients
13. Melt white chocolate gently in a microwave
14. Mix in pumpkin powder and food colouring
15. Spread a layer onto each pie and gently tap the bottom to smooth out
16. Let it set and gently melt dark chocolate
17. Use toothpicks to draw on Jack o lanterns faces on the pies
Tips
I. You can use fresh pumpkin and make your own puree, we use canned 100% pumpkin (Please do not use canned pumpkin pie filling)
II. You can make your own homemade pie crust, we use store bought for convenience
III. This is not your typical “fall” pumpkin pie flavour with all the spices, it is a sweet and buttery, custard-like pie. Try it before you bash it!
IV. If you cannot find coconut milk powder, substitute with 1 tbsp of coconut milk and only use 90g milk
