Spinach Quiche Wreath

On bizarre island, we never miss our chance to be festive :)

And it is December, that means is time to whip out the fun Decorations

We always try to think of something cute and creative in the mix of our recipes and today, we have this brilliant idea to use a tube pan and create a wreath shape pie. Putting in some green in the mix and The Spinach Quiche Wreath is born :) 



Christmas Wreath Spinach Quiche 
Yields 7 inch pie 

Ingredients
Pastry:
140g (1 cup plus 2 tbsp) AP flour
75g (1/3 cup) Butter, cold and cubed
60g (1/4 cup) Ice water
Pinch of salt

Filling:
60g (2.1 oz) Cream cheese, soften
55g (1/4 cup) Milk
2 Eggs
165g (5.8 oz) Frozen spinach, thawed and drained
30g (1 oz) Mozzarella cheese, shreded 
30g (1 oz) Parmigiano reggiano, grated
4 Spring onions, finely chopped
Pinch of ground nutmeg
Salt, to taste
Black pepper, to taste

Method
1. Combine flour, salt and cold butter into a food processor and pulse until the mixture resembles course meal
2. Add the ice water gradually and process until the dough comes together into a ball
3. Wrap the dough in cling wrap and refrigerate for 1 hour
4. Preheat the oven to 200°C (400°F) 
5. Roll the pastry out to around 3mm ~ 6mm (1/8 inch ~ 1/4 inch) thick 
6. Generously grease the tube pan 
7. Cut the pastry into a circle and long 2.5cm (1 inch) strips to line the pan
8. Push the edges together to make the pastry attach
9. Dock the pastry and refrigerate until filling is ready
10. In a bowl, beat cream cheese until it is smooth
11. Gradually add in the milk and eggs 
12. Mix in the remaining ingredients and season with salt and pepper to taste 
13. Pour the mixture into the uncooked shell 
14. Bake for about 30 minutes or until the pastry is golden and the filling is set
15. Cool for about 10 minutes before unmolding to prevent breakage

Tips
I. If you have a baking stone, put it on a rack in the lower-middle part of the oven before preheating
II. You can you use store bought pie crust and cut it according to your pan size
III. If you do not have a tube pan, you can make an insert with foil and place it in the middle of usual tart pan to support the dough
IV. If you want the tart crust to be more green, you can use ice cold spinach juice instead of water to give it a green shell
V. If you don't own or don't want to use the food processor, you can rub the cold butter and flour with your fingers or use a pastry cutter (Learn the finger rubbing technique HERE )
