A Quick update on this meringue recipe :)
Meringue is so delicate yet versatile to pipe into different shapes, it's near halloween and the snowy white meringue make perfect cute ghost to roam around the party with your guest ~
Meringue Ghost Cookies
Yields a dozen Cookies
Ingredients
2 Egg Whites
3ml (1/2 tsp) Lemon Juice
100g (1/2 cup) Sugar
Black food colouriing
Method
1. Preheat oven to 110°C (225˚F)
2. Using an electric mixer, whip the egg whites for a few minutes on high speed until they become frothy
3. Add in lemon juice and whip for 30 seconds
4. Add your sugar in small amounts.
5. Continue to whip the mixture until it gets stiff peaks
6. Line baking sheet with parchment paper
7. Place the meringue mixture into a piping bag.
8. Pipe dollops of ghost shapes around the same size
9. Bake them for about 45 minutes or until the tops become a little brown.
10. Cool completely and draw on eyes and mouths or hands to your ghost with the black food colouring
Tips
I. Store in an air tight container to avoid it absorbing moisture
II. These delicate cookies taste best on day 1
