Matcha Tea-ramisu in a Cup

We are back with our written recipes... It may sound absurd but our graphic tablet got a little wonky and we are not able to produce infographic / illustrations for our recipes.

We like to update our recipe post with full content before we post it so there was a delay with them.

Matcha-misu/ Matcha tea-ramisu , A green tea twist to the favourite Italian classic.  


Matcha Tea-ramisu
Yields 2 servings

Ingredients
Matcha Sponge Lady Fingers:
2 Egg Yolks
2 Egg Whites
30g (2½ tbsp.) Granulated sugar
30g (1/3 cup) Cake Flour
Pinch of Salt
2tbsp matcha

Tiramisu Cream:
3 Egg Yolks
60g (1/3 cup) Sugar
250g (8.8oz) Mascarpone Cheese
15g (1 tbsp.) Brandy
15g (1 tbsp.) Milk
6g (1 heaped tsp.) Gelatin

Matcha Syrup:
60g (1/4 cup) Hot water
2g (1 tsp.) Matcha powder
25g (1/8 cup) Granulated sugar
5g (1 tsp.) Sweet Marsala

Matcha Powder

Method
1. Preheat oven to 190°C (375°F)
2. Beat egg yolks and 1 tbsp of sugar until ribbon stage
3. Whip the egg whites with the remaining sugar until stiff peaks
4. Fold the egg whites and egg yolks together while sifting in the cake flour and salt.
5. Pipe them on a baking sheet and bake for 12-15 minutes, let it cool
6. Prepare soaking matcha syrup by dissolving the sugar in the hot water and let it cool down a little
7. To the lukewarm syrup, sift in matcha powder and mix until well dissolve
8. Add in sweet Marsala into the cooled syrup and set it a side
9. Follow the instructions for Tiramisu Cream by this link
10. To assemble : Soak Sponge Fingers in the Coffee mixture and lay it on the bottom of your dessert cups/molds
11. Pipe or scoop Tiramisu cream and layer on top of the Sponge Fingers
12. Sprinkle a thin layer of matcha powder on the cream and repeat Step 12 once more
13. Chill dessert for at least 3 hours before serving or unmolding

Tips
I. Matcha is a type of green tea and comes in powder form, can be bought in Asian markets and Tea stores
II. Make sure your bowl and utensils is free of oil when whipping your egg whites, as oil will prevent the whites from whipping. Egg yolk is a form of oil so you must be careful when your are separating your eggs
III. For Kids, you can omit all the liqueurs, it will lack a bit of flavor but the children wouldn’t notice
IV. Matcha is a green with a slight bitterness to it, just like cocoa powder and coffee so it makes a great match to the mascarpone cream
