Mini Fruit Pancake Skewers

When you say breakfast, the first thing that comes into mind is cereal with milk << I am the laziest person in the world... But the second thing is Pancakes!!

Who doesn't love a good pancake. There're easy to make and the paring options are infinite. If you could imagine it, I am sure it will go well.

These miniature versions are crazy cute and easy to fit in a picnic basket. Take your breakfast to the park and enjoy the sun with it.

You can go the good old fashion way with butter and maple syrup or even make bacon pancake pops with them or just mix in some mini chocolate chips into the batter for the most delicious chocochip pancakes


Bite size Breakfast Pancakes
Yields 4 servings

Ingredients
190g (1 ½ cups) Flour
10g (3 ½ tsp.) Baking powder
12g (1 tbsp.) Sugar
3g (½ tsp.) Salt
1 Egg
295g (1 ¼ Cups) Milk 
45g (3 tbsp.) Butter, melted

Method
1. Sift all dry ingredients together
2. Make a well pour in milk, butter and egg and mix until smooth
3. Heat a pan or a griddle and drop 1 tsp of batter for each pancake
4. Fry both sides until golden
5. Stack mini pancakes and dust them with icing sugar
6. Serve with fruits

Tips
I. If you decide to make them regular size pancakes, drop 1/4 cup of batter into the griddle
II. Regular icing sugar will dissolve when in contact with moisture so sprinkle just before serving
