Tomato Bisque without Stock

Tomato soup or tomato bisque is a sweet and delightful dish.

I promise every tomato lover would sure love this soup.

Our no stock variation still has the full flavour offered by the normal one as our recipe chose to use lots of aromatic veggies.

For a vegan version, you can just omit the bacon. It will still taste as good but without a hint of smokey taste.

This is a light soup, if you are going for a thicker consistency or a creamy texture, you can either minus 1 cup of water or add one small potato. The potato will give the most velvety texture, even more than heavy cream, Trust me :)

Soups are easy and fun to experiment, give it a try and choose your favourite combo of ingredients.

Tomato Soup
Yields 6 servings

Ingredients
4 Large/6 medium Fresh tomatoes, quartered
15g (1 Tbsp) Olive oil
1/2 Onion, chopped
2 Garlic cloves
1 Celery stalk, chopped
1 Carrot, chopped
3 strips of Bacon
1000g (4 cups) Water
Dried Parsley flakes
Salt
Sugar

Method
1. Heat olive oil in a large saucepan over medium heat
2. Sauté bacon, add onions and cook for 2-3 minutes until soft
3. Add garlic, celery stalk and carrot, cook for 1 minute
4. Add 1000g (4 cups) water, then bring to the boil
5. Reduce heat to low, cover and cook until the vegetables are tender
6. Turn off stove and cool slightly, using a hand blender and blend until smooth
7. Turn on stove to low heat and reheat, then season with salt and pepper to taste
8. Garnish with dry parsley flakes

Tips
I. If you do not have a hand blender, transfer the soup into a stand blender and return the soup to the pan after blending
II. Tomato soup can be serve with croutons or cheese twist
