Hong Kong Styled Egg Tart Recipe

If you have never tried an egg tart, you have to try our recipe.

The buttery flavour from the crust and the perfectly smooth custard all baked in to one perfect pastry.

As two girly girls, we decorated them with cute little chocolate faces that is optional but will be perfect for a gift to someone or just bring it to potluck to impress some of your friends :)




Hong Kong Egg Tart
Yields 9 tarts

Ingredients
Crust:
227g(2 sticks)Butter, soften
55g (7 Tbsp) Confectioners sugar, sifted
0.5 Large Egg, beaten
370g (4 1/8 cup) Cake flour
15g (1/4 cup) Milk powder

Custard:
355g (1 1/2 cup) Water, boiling
95g (1/2 cup) White sugar
125g (1/2 cup) Milk
5g (1 tsp) Vanilla extract
4 Large eggs


Method
To prepare tart crust :

  1. Cream soften butter and sifted confectioner’s sugar together until light and fluffy
  2. Add beaten egg and whisk until well combined
  3. Fold in flour and milk powder to the mixture, forming dough
  4. Wrap the dough in plastic wrap and refrigerate for 15 minutes
  5. Portion 30g (1.05oz) of dough for each tart Press dough into a 7cm (3”) tart ring to form crust
  6. Dock the bottom of the crust with a fork
  7. Repeat process with the remaining dough, refrigerate until use.
  8. Preheat oven to 200°C (400°F)


To prepare custard filling :

  1. Dissolve caster sugar in boiling water and leave it to cool to room temperature
  2. Crack eggs into a separate bowl to prevent bad eggs
  3. Add milk, vanilla extract and eggs into the sugar solution Whisk until well combine
  4. Pass filling through a fine mesh sieve to remove impurities ensuring smooth custard
  5. Take the tart crust out from the fridge and pour the filling up to 90% full
  6. Bake for 15- 17 minutes , turn off the oven and let it sit for 5 minutes before taking it out to cool completely


To prepare chocolate decoration :

  1. Place a template on a flat surface and tape a parchment paper above to secure it
  2. Melt different colours of compound chocolate and pipe on the features
  3. Finish the remaining faces and refrigerate for 10 minutes to let it set firmly
  4. Place the garnish on the tart and serve :)
