Emote Your Heart Cheesecake

In a cute heart shape for a single portion, the soft baked cheesecake is rich yet lighter than a more traditional one.

Every bite will make you fall in love again.

If you dislike the idea of food colouring, you can use a  bit of jam or fruit syrup to colour and flavour your cheesecakes, just tweak the recipe a bit by subtract 1 heap tbsp of sour cream. For the message, you can use a stencil and sprinkle cocoa powder or icing sugar to avoid the colouring, again.

Valentine Cheesecake
Yields 6 hearts

Ingredients
140g (1 cup) Cracker crumbs*
55g (4 tbsp.) Butter, melted
227g (8 oz.) Cream cheese, softened
50g (1/4 cup) Sugar
2 Eggs, small
227g (8 oz.) Sour cream
2.5ml (1/2 tsp) Vanilla extract
2.5ml (1/2 tsp) Lemon juice
Food coloring - Pink, Purple, Brown

*You can use graham cracker crumbs or any cookie crumbs of your choice. We used a mixture of Oreo and Digestive crumbs

Method
1. Preheat oven to 160°C ( 325˚F)
2. Combine cracker crumbs and melted butter, stir until it looks like wet sand
3. Spoon 2 tablespoon of crumb mixture into each heart mould
4. Press the crumbs down making an even crust
5. Refrigerate until ready to fill with cheesecake mixture
6. In a bowl, beat the cream cheese until smooth, scraping down the sides of the bowl as needed
7. Add sugar and beat for one minute
8. Add eggs and beat until creamy, scraping the sides of the bowl once
9. Add the sour cream and vanilla and mix just to combine
10. Equally divide the filling among 3 bowls. Add different food colouring for each one
11. Pour coloured cheesecake filling into the mould
12. Bake cheesecakes in a water bath for 22-25 minutes
13. Remove your baked cheesecakes and allow to cool at room temperature for an hour
14. Freeze the cheesecakes for at least 2 hours
15. Remove from freezer and push on the underside of each heart, releasing the cheesecakes
16. To add love phrases, squeeze a few drops of brown food colouring into a small bowl
17. Use a fine tip paintbrush to paint the words onto each cheesecake heart

Tips
I. If you have trouble unmoulding the cakes, freeze them solid hard, it will pop right out, defrost before serving
II. Over baking cause cracks and browning, so keep an eye on it while baking (We lost track in filming another recipe*heehee* so you could see in the photos of the browning parts)
