Christmas Brownies 4 Ways

Christmas is a time when friends and family gather together for the coziest party ever.
And when you have a party, food is one important element that could tie in with the holiday spirits.

If you ever go to a friends place and bring these brownies over, I promise you will wow them off.

This is not only a Christmas themed decorated brownie, it is filled with a fresh strawberry and topped with different types of whipped ganache. It sure taste as good as it looks.

Just try it out yourself, you sure would not regret it :)



Christmas Brownies
Yields 24 brownie bites

Ingredients
Brownie:
100g (3.4 oz) 70% chocolate, chopped
75g (1/2 cup) unsalted butter, cut into pieces
10g (1 1/2 tbsp) Cocoa powder, sifted
65g (1/3 cup) White sugar
5g (1 tsp) Vanilla extract
2 large Eggs
63g (3/4 cup) Cake flour
A pinch of salt

Whipped Ganache:
200g (6.8 oz) White Chocolate
125g (1/2 cup + 1 tsp)Heavy Cream
2.5g (1 tsp) Matcha Powder
2.5g (1/2 tsp) Peppermint Extract
Green food coloring (optional)

18 Strawberries, hull and trimmed
Assorted Sprinkles

Method
Brownie:
1. Preheat oven to 160°C (320˚F)
2. Melt chocolate and butter
3. Add sugar and cocoa powder into the mixture
4. Whisk in vanilla extract and eggs, one at a time, beat well after each addition
5. Incorporate flour and salt and mix well
6. Grease mini cupcake pan
7. Put batter in piping bag and pipe until ¾ ways full
8. Bake for 15 min and leave it to cool

Whipped Ganache:
1. Melt white chocolate and cream together
2. Rest and cool until cool to touch
3. Use electric beaters to whip mixture half way (soft peaks)
4. Divide mixture into 3 parts (1/5 original, 2/5 peppermint, 2/5 green tea)
5. Add respective flavors and color to the divide ganche
6. Whip each part to stiff peaks and fill into 3 different piping bags fitted with 3 different tips
        (Original: 1 cm round tip, Peppermint & Green Tea: Star tip)                                         
7. Assemble:
  • Santa Hat = Original whipped ganache + 1 Strawberry
  • Wreath = Matcha Green tea ganache + Holly sprinkles
  • Xmas Tree = Matcha Green tea ganache + 1 Strawberry + Rainbow Sprinkles + Star Sprinkles
  • W-Xmas Tree = Peppermint ganache + 1 Strawberry + Silver dragees + Star Sprinkles

Tips
I. If whipped ganache starts to soften in your hands when piping, put the whole piping bag into the fridge for 5min to firm it up.
II. Baking brownie time varies, if you want a gooier texture bake 2min less
III. Cut strawberries release juices when coming in contact with sugar, so better consume within 3 days
