Rudolph Mini Baked Doughnuts

Sorry for the late post :) We have been on holiday for a couple of days and did try to pull off the video during it so the recipe post has been delayed. But here it is :) Enjoy!

Dasher, Dancer, Prancer, Vixen, Comet, Cupid, Donner, and Blitzen are all Santa's reindeers but I am sure you all are most familiar with the very special reindeer of the bunch, Rudolph ~

His red little shiny nose has led the sleigh in a foggy christmas eve and now to honour him for helping the children not to miss out on the special night, we have made the cutest ever mini baked doughnut versions of him :)

You may see a lot of different styles of the same idea, but this is our take on a silly Rudolph for lots of smiles and giggles on the Christmas :)

Silly Rudolph Doughnuts
Yields 36 mini Doughnuts

Ingredients
Donut:
15g (1 tbsp) Vegetable Shortening
200g (1/2 + 1/3 cup) Milk
7g (2 ¼ tsp) Active dry Yeast
60g (1/3 cup) White sugar
320g (3 cups + 3 tbsp) Plain Flour

Glaze:
100g (3.4oz) Semi-sweet Chocolate
15g (1 tbsp) Vegetable Shortening

Decoration:
Peanut M&Ms
Chocolate-piped antlers or Pretzels
Candy Sprinkles

Method
Donut
1. Combine milk and shortening and heat it until lukewarm 41°C - 46°C (105°F - 115°F)
2. In a large mixing bowl, add milk mixture, a tablespoon of sugar and active dry yeast
3. Wait for the yeast to activate (around 5-10 min or looks foamy)
4. Stir the mixture and add in all the flour then sugar
5. Start the mixer and let it knead with a dough hook for 7 min (or until dough is smooth) on low
6. Place dough in a warm place to rise for an hour until doubled in size
7. Flour your working surface and turn out the dough
8. Punch down the dough and roll it into 5mm thick
9. Cut out 6cm (2.5 inches) donut shapes
10. Re-roll the off cuts and cut again until no dough is left
11. Cover it and let it rise the second time in a warm place for 45 min until doubled in size again
12. Preheat oven to 180°C (350°F)
13. Bake doughnuts for 8 min until golden brown
14. Let it cool completely

Glaze
1. Melt chocolate and shortening together in a Bain Marie until smooth

Assemble
1. Dip one side of the cooled donut in the chocolate
2. Tap of the excess and wiggle to smooth it out
3. Before the glaze is dry, place an M&M in the hole and add sprinkles for the eyes
4. Let the glaze dry
5. On the side above the eyes, make a slit with a sharp knife
6. Insert Antler decorations
7. Serve it with coffee or tea or Hot cocoa (yum :p)

Tips
I. Dough Recipe can be kneaded by hand if you don’t own a mixer
II. If you are going for the more traditional version, you can deep fry it in oil at 180°C (350°F) for 1min per side
III. Shortening in dough can be replaced by butter but cannot be replaced in the glaze or else it would not set properly
IV. Make sure your yeast is not dead, this is mainly the reason to fail ☺
